In 2022 I explored the idea of cultivating culinary literacy through garden education at HOPE Garden Project in Shelton, Washington. Our activities started off by building an outdoor kitchen at Mason General Hospital where the Older Youth Employment Program will participate in weekly cooking workshops highlighting culinary basics, nutrition, food accessibility, mental health, and recipe creation. Another focus was encouraging the students to showcase recipes and meals we created together using seasonally available produce we grew ourselves, incorporating alternative homemade versions of their favorite foods, and facilitating the creation of their own cookbooks. This work is crucial in establishing alternative education and creating a safe, exploratory space for teens. We discussed socially and culturally relevant topics such as our relationships to our bodies, mindful eating, beauty standards, food accessibility and food insecurity, basic health and nutrition, grocery shopping, cooking on an EBT budget, and so much more. Hosting these conversations in an open and safe environment will encourage healthier behaviors, teach agency, and provide support to better navigate our food system.
