Colcannon
4 potatoes, peeled and cubed
6 leaves of kale, washed, ribbed, and sliced very thin
(or 1/2 cabbage if preferred)
1 onion, peeled and chopped
1-1/2 c. half and half
butter

Boil the potato pieces until tender. Cook the onion and sliced kale (or cabbage) for about ten minutes (while the potatoes are boiling) in butter. Add the half and half and bring to a gentle simmer. Add the potatoes and mash together. Place in serving dish and put a large pat of butter on top to melt. Chop up some chives and sprinkle on top.
