Barmbrack
2 c. dried fruit, chopped
2 c. hot tea
2-1/2 c. flour
1-1/2 t. cinnamon
1/2 t. baking soda
1-1/2 c. sugar
1 egg
3 T apricot or marmalade jam
Soak the chopped dried fruit in the tea for a couple of hours, then drain. Preheat oven to 350 degrees. Mix flour, soda, and spicesĀ first, then beat the egg with the sugar. Add the fruit and jam to the egg/sugar mix, then gently fold in the flour mixture. Pour into a greased loaf pan (or round cake pan) and bake in preheated oven for an hour. Cool completely while still in the pan. Slice and slather with butter.
